Supporting multiple cutting patterns such as squares, circles, and triangles, it produces smooth, deformation-free surfaces while preserving the texture of even the most delicate chilled desserts. Designed with low-friction, pressure-free cutting and built for reliability, the PC-800A reduces labor, boosts cutting efficiency, and is the ideal solution for central kitchens, chain bakeries, and high-volume cake production.
Advantages
Ultrasonic Cake Cutting Machine
Precision Cutting for Round, Square, and Beyond
Equipped with a digital ultrasonic cutting system, the PC-800A delivers automatic frequency tracking with real-time monitoring of the ultrasonic blade frequency, ensuring stable, consistent cutting performance throughout every cycle.
A variety of cutting modes are built into the system for round cakes, square cakes, and various pastries — from clean squares and circles to precise triangles, with custom patterns available on request. Powered by a premium titanium alloy blade vibrating at approximately 20 kHz, it cuts with virtually zero friction and pressure, leaving smooth, crumb-free surfaces with no deformation.
And when it comes to cutting a full pan of brownies — the PC-800A is simply the best way to do it.

Cutting Patterns & Products
Round cakes - mousse rings and round sponges are cut into wedges or halves with the glaze and the outer edge left intact.
Square and slab cakes - whole trays are portioned into uniform squares in one pass instead of being marked and cut by hand.
Pastries and pies - tarts, pies and similar baked items that flatten or tear under a knife blade come away with clean edges.
Brownie and traybake pans - dense, sticky products that normally gum up a knife come away with clean sides.
Sandwich and bread lines - those run at conveyor speed, so a commercial ultrasonic bread cutting machine with a conveyor is the better match than this floor-standing cutter.
Blade Care & Daily Hygiene
Ultrasonic cutting leaves very little behind on the blade, but a food cutting room still runs on routine. Wipe the ultrasonic food cutting blade and the cutting area at every product change, and check the blade edge at the end of each shift for product build-up or damage. Keep the cutting zone clear of trim and offcuts so trays can be loaded without touching the blade, and store spare blades flat and protected so the edge is not knocked against a shelf or drawer.
Build those steps into your own food safety plan, and tell us which cleaning agents and documents your QA team works with - we can supply the material and compliance information to match. Confirm the exact cleaning routine with your hygiene team before the machine goes into production.
Set-Up & Operating Notes
Plan the installation with your electrician and your layout drawings before the machine is moved into place.
Run a full tray during commissioning and check where the pattern lands on the product; this is the stage to fine-tune the portion layout.
Set the cutting parameters on the ultrasonic food cutting system for each product family, so the machine is adjusted to the item in front of the operator rather than locked to one size.
Train operators on pattern selection and settings, so switching between a mousse cake run and a pastry run does not slow the line down.
Agree who owns the daily start-up checks and the end-of-shift sign-off before full production begins.
Arrange commissioning support, the technical data pack and a spare blade set with our team before delivery.
Technical Support & Model Matching
Unsure which ultrasonic system fits your workpiece or production line? MCSONIC's engineering team helps you select the right machine, horn or blade configuration before you order, backed by over 10 years specializing in ultrasonic cutting and systems widely used in factories worldwide. We support customization of key parameters, integration into existing automation lines, and clear guidance on installation, commissioning and daily operation. Our after-sales engineers help troubleshoot issues remotely or on site, and selected systems support remote diagnostics. Send us your drawings, samples or cycle targets and we will recommend a practical configuration.
FAQ
Can it cut cakes with cream layers, soft centres or fruit fillings?
Soft fillings hold their shape as the blade passes through: cream, mousse and fruit stay inside the slice instead of being dragged out, and the cut face stays clean. Glazed and layered products also keep their top layer in line, where a knife tends to pull it out of place.
Can you make a custom cutting pattern for our product range?
Squares, circles and triangles are standard, and custom patterns can be produced on request. Send the shape you need as a drawing or a sample portion and we will confirm what the blade and pattern set should look like. Once a pattern is set, the same ultrasonic cake slicer runs it alongside your standard shapes.
Can we cut cakes straight out of the chiller?
Yes. Cold, delicate products are where ultrasonic cutting makes the biggest difference - the blade never presses down on a set mousse or a chilled glaze, so nothing cracks or slumps. In most kitchens that means portioning straight from the chiller instead of letting products come back up to room temperature first.
Which cutter width should we choose?
The wider blade span suits full-size slab trays; the narrower one is the better match for smaller round and square trays. Send us your tray dimensions and the portion layout you want, and as an ultrasonic food cutting machine supplier we will confirm which span to put on the machine.
Can the same machine cut sandwiches and bread?
This is a floor-standing cake and pastry cutter, so it is not the right tool for high-speed sandwich or bread lines. For that work we build a conveyor-fed commercial ultrasonic bread cutting machine, which uses the same pressure-free cutting principle at conveyor speeds.
How can a blade cut without squashing the cake?
The ultrasonic food cutting blade vibrates at approximately 20 kHz - around 20,000 cycles a second - so it separates the product rather than forcing an edge through it. There is no downward pressure on the cake and very little drag on soft fillings, which is what keeps layers and cut faces intact.
